Easy White Chocolate Lemon Truffles

Just like our popular chocolate peanut butter no-bake dessert, these truffles require no oven time, making them perfect for warm summer days.

  • 10 ounces white chocolate chips (1¼ cups)
  • 3 tablespoons unsalted butter
  • 3 tablespoons heavy whipping cream
  • 1 lemon, zested and juiced
  • ¼ cup powdered sugar

 

  • 2-3 drops yellow food coloring (optional)

Instructions

  • Prepare the Base: Place white chocolate chips in a medium, heat-proof bowl and set aside.
  • Create the Ganache: In a medium saucepan, combine butter, cream, and lemon zest. Warm over medium heat until butter melts completely. Continue heating until small bubbles appear around the edges, then remove from heat.
  • Combine Ingredients: Pour the hot cream mixture through a fine-mesh strainer over the white chocolate. Let stand for 1-2 minutes, then whisk gently until smooth.
  • Add Flavoring: Stir in 1 tablespoon of lemon juice and optional food coloring until well incorporated. Cover the mixture and refrigerate until firm (1-2 hours).
  • Shape the Truffles: Using a tablespoon scoop or spoon, portion the chilled ganache and roll between your palms to form balls.

 

  • Final Touch: Roll each truffle in powdered sugar until fully coated. Place on a lined baking tray or plate.
