  • 2 teaspoons vanilla extract

Instructions

  • Prepare Your Baking Setup: Preheat your oven to 350°F (175°C). Pour melted butter into a 9x13 baking dish, ensuring it coats the bottom and sides completely.
  • Create the Peach Filling: Combine the canned peaches with their juice, 1 cup of sugar, and 1/2 cup water in a medium saucepan. Heat over medium heat until the mixture begins to simmer.
  • Thicken the Sauce: In a separate bowl, dissolve cornstarch in the remaining water. Stir this mixture into the simmering peaches and cook for about 3 minutes until the sauce thickens. Remove from heat and allow to cool slightly.
  • Mix the Cobbler Batter: In a medium bowl, whisk together the self-rising flour, 1 1/2 cups sugar, vanilla extract, and milk until smooth.
  • Layer Your Cobbler: Pour the prepared peach mixture over the melted butter in the baking dish. Do not stir. Carefully spoon the flour mixture over the peaches, allowing it to spread naturally.
  • Add the Final Touch: Combine the remaining sugar with cinnamon and sprinkle this mixture evenly over the top of the cobbler.
