- 1½ pounds fresh Brussels sprouts
- 3 garlic cloves, minced
- 1½ tablespoons extra virgin olive oil
- ½-1 teaspoon coarse salt
- ¼ teaspoon freshly ground black pepper
- ½ teaspoon red pepper flakes
- 3 tablespoons freshly grated Parmesan cheese
- Additional Parmesan for serving (optional)
Instructions
- Prepare the Oven: Position a rack in the middle of the oven and preheat to 400°F (200°C).
- Prep the Sprouts: Remove any damaged outer leaves, trim the stems, and slice each sprout in half lengthwise. Wash thoroughly and pat completely dry.
- Season: Place the prepared sprouts on a large baking sheet. Drizzle with olive oil, then sprinkle with minced garlic, salt, black pepper, and red pepper flakes.
- Mix Well: Using your hands or a large spoon, toss everything together until the Brussels sprouts are evenly coated with oil and seasonings.
- First Roast: Arrange the sprouts cut-side down on the baking sheet and roast for 10 minutes.
- Add Cheese and Finish: Remove from oven, sprinkle with Parmesan cheese, and return to oven for 10-15 minutes more, until the sprouts are tender inside with crispy, golden-brown edges.
